I will start with an idea for a Food Biotechnology project:
How about "Extraction of Carotenoids (for natural colors) from fungi isolated from various/ or a particular food source"
This doesn't require complicated equipments, and there is ample literature on this subject. We have an expert (with > 5 years experience in this field) to guide you whenever u need some help in an unsolvable aspect during the project!
